1 Tbsp Kosher Salt
1 lb Spaghetti (Fresh or Dried)
1 lb Daily’s Deep Applewood Thick Cut Bacon, Diced
1⁄4 Cup Extra Virgin Olive Oil
1 Each Sweet Onion (Finely Chopped)
6 Each Fresh Garlic Cloves (Sliced / Chopped)
To Taste Crack Black Pepper
Cook Pasta according to package direction... target to slightly undercook so that you can finish the cooking process in the sauce. (Reserve ~2 Cups Pasta Water)
Cook the chopped bacon in 1 tablespoon of the olive oil until even & crispy.
Once Crisp, remove bacon from the pan and reserve. Add onion and garlic to the pan, and cook until tender and fragrant.
Add 1⁄2 - 1 cup pasta water, bring to a simmer and add cooked pasta. Toss / Stir together and continue to simmer.
Add additional Pasta Water as needed to develop (add) sauce.
Add Bacon, and season with pepper.
Garnish and serve immediately.
