Drunken Beans

Serves: 4 servings


  • 8 Each Daily’s® Honey Cured Thick Cut Bacon, cooked crisp & chopped
  • 4 Crusty bread (ie. Italian)
  • 1⁄4 Cup Extra virgin olive oil
  • 2 Ripe avocados
  • 3 Tbsp Fresh chives, chopped
  • 3 Tbsp Parsley, chopped
  • 2 tsp Lemon Juice
  • To Taste Kosher salt
  • To Taste Cracked black pepper
  • 1 Each Tomato, coarsely chopped


  1. Preheat the oven to 425 degrees F.
  2. Brush the bread with olive oil. Place the bread on a baking sheet and bake until golden brown, 10 to 12 minutes.
  3. Mash the avocados in a small bowl. Add 2 tablespoons each of the chives and parsley (reserving remaining), the lemon juice, salt & pepper. Mix to combine.
  4. Toss the tomatoes in a small bowl with the remaining 1 tablespoon each olive oil, chives and parsley.  Season with salt and pepper.
  5. Assemble with 1/2 cup of the avocado mixture and 1/8 cup of the tomato mixture for each piece of toast. Sprinkle with the chopped bacon and additional kosher / sea salt.
