3 – 4 Each Sweet plantains (Should be very ripe)
24 oz Daily’s Cherry Applewood Thick Cut Bacon (strips cut in half)
Vanilla Maple Mustard Dip
1⁄2 Cup Spicy brown mustard
2 Tbsp Maple syrup
1 tsp Pure Vanilla extract
1⁄4 tsp Toasted cinnamon (ground)
1⁄4 tsp Garlic powder
Preheat oven to 375°F
Line a baking sheet with parchment paper.
Remove the peel from plantains and cut 1/2 inch bites diagonally (on a bias).
Wrap one piece of bacon around a piece of plantain... secure with a toothpick if necessary.
Place on baking sheet.
Bake for 15 minutes, flip, then bake for another 10-15 minutes.
Combine / mix the mustard, maple syrup, vanilla, cinnamon, and garlic powder together until smooth. Serve on the side.
