Thai Lettuce Wrap

Ingredients

Lettuce Wraps

  • 24 oz. Daily’s® Bacon

  • 3 Lettuce heads (Boston, Bibb, or Butter)

  • 2 Red bell peppers, thinly sliced

  • 3 Carrots, julienned

  • 6 Green onions, sliced

  • 1 Seedless cucumber, julienned

  • 1 bunch Mint

  • 1 bunch Basil

  • 1 bunch Cilantro

  • 1/4 cup Peanuts, crushed


Peanut Sauce

  • 3/4 cup Smooth peanut butter

  • 1/4 cup Soy sauce

  • 2 Tbsp. Rice vinegar

  • 1/4 cup Light brown sugar

  • 1 Tbsp. Chile garlic sauce

  • 1 Lime, juiced

  • 4 Garlic cloves, minced

  • 3 Tbsp. Ginger, grated

  • 2 tsp. Fish sauce

  • 1 cup Coconut milk

  • 1/3 cup Water, warm

Preparation

  1. Combine peanut sauce ingredients in small saucepan over low heat until combined.

  2. Lightly simmer for 5 minutes. Add more water to thin out the sauce to  desired consistency (as needed). Remove from heat and reserve.

  3. In the oven, at 425 degrees, cook bacon until just caramelized/crisp.

  4. Separate lettuce leaves, and reserve.

  5. Combine sliced vegetables (bell pepper, carrot, onion, & cucumber) and reserve.

  6. Rough chop the mint, basil and cilantro, then combine and reserve.

  7. Fill lettuce leaves with ½ strip of bacon, then add vegetables. Next,  sprinkle with the mint, basil and cilantro combination. Drizzle with  peanut sauce. Top off with crushed peanuts and serve immediately.
