Daily’s® Bacon 3 Lettuce heads (Boston, Bibb, or Butter) 2 Red bell peppers, thinly sliced 3 Carrots, julienned 6 Green onions, sliced 1 Seedless cucumber, julienned 1 bunch Mint 1 bunch Basil 1 bunch Cilantro 1/4 cup Peanuts, crushed Peanut Sauce 3/4 cup Smooth peanut butter 1/4 cup Soy sauce 2 Tbsp. Rice vinegar 1/4 cup Light brown sugar 1 Tbsp. Chile garlic sauce 1 Lime, juiced 4 Garlic cloves, minced 3 Tbsp. Ginger, grated 2 tsp. Fish sauce 1 cup Coconut milk 1/3 cup Water, warm Combine peanut sauce ingredients in small saucepan over low heat until combined. Lightly simmer for 5 minutes. Add more water to thin out the sauce to desired consistency (as needed). Remove from heat and reserve. In the oven, at 425 degrees, cook bacon until just caramelized/crisp. Separate lettuce leaves, and reserve. Combine sliced vegetables (bell pepper, carrot, onion, & cucumber) and reserve. Rough chop the mint, basil and cilantro, then combine and reserve. Fill lettuce leaves with ½ strip of bacon, then add vegetables. Next, sprinkle with the mint, basil and cilantro combination. Drizzle with peanut sauce.
