Bacon & Spinach White Pizza

Serves: 8 servings
Ingredients:
Lettuce Wraps- 24 oz. Daily’s® Bacon
- 3 Lettuce heads (Boston, Bibb, or Butter)
- 2 Red bell peppers, thinly sliced
- 3 Carrots, julienned
- 6 Green onions, sliced
- 1 Seedless cucumber, julienned
- 1 bunch Mint
- 1 bunch Basil
- 1 bunch Cilantro
- 1/4 cup Peanuts, crushed
- 3/4 cup Smooth peanut butter
- 1/4 cup Soy sauce
- 2 Tbsp. Rice vinegar
- 1/4 cup Light brown sugar
- 1 Tbsp. Chile garlic sauce
- 1 Lime, juiced
- 4 Garlic cloves, minced
- 3 Tbsp. Ginger, grated
- 2 tsp. Fish sauce
- 1 cup Coconut milk
- 1/3 cup Water, warm
Preparation:
- Combine peanut sauce ingredients in small saucepan over low heat until combined.
- Lightly simmer for 5 minutes. Add more water to thin out the sauce to desired consistency (as needed). Remove from heat and reserve.
- In the oven, at 425 degrees, cook bacon until just caramelized/crisp.
- Separate lettuce leaves, and reserve.
- Combine sliced vegetables (bell pepper, carrot, onion, & cucumber) and reserve.
- Rough chop the mint, basil and cilantro, then combine and reserve.
- Fill lettuce leaves with ½ strip of bacon, then add vegetables. Next, sprinkle with the mint, basil and cilantro combination. Drizzle with peanut sauce. Top off with crushed peanuts and serve immediately.
